Holly Gale, owner of Hearth Patisserie, earned her degree in L'Art de la Patisserie at the French Pastry School in Chicago. She has worked in Chicago since 2012 starting as a baker at Metropolis Coffee Company. She then continued her career working at the renown French restaurant Everest, a 30 year old Michelin star institution. Later she worked with Gage Hospitality help managing three restaurants and then continued on to work at Two Michelin rated Acadia. Now she makes her way to Cleveland to spread the warmth of Hearth.
