Bruno Mota is the co-founder and CEO of Pembroke & Co., where he builds lasting partnerships with his clients and creates innovative solutions to best support them. Bruno started his career in restaurant management, where he joined a quick-service restaurant (QSR) group in the loss prevention department. After switching to finance, he quickly got calls from QSR owners requesting his loss prevention services. What Bruno thought would be short-term help for his peers quickly unveiled itself as a wide-scale need. After decades in the industry, he added machine learning (ML) and artificial intelligence (AI) to his portfolio of expertise to better serve his clients.

  • AI Revolutionizes Food Industry Supply Chain and Operations
Bruno predicts "breakthrough innovations in farming, manufacturing, and transportation," with AI models reducing costs and extending shelf life. He highlights robots in restaurants, like fryolator robots, and advanced algorithms enhancing operations by analyzing sales data and surveillance footage. These advancements promise to revolutionize the food industry more than automated ordering systems.
  • AI in Foodservice: Opportunities and Cautions for Independent Restaurants
Bruno warns that while AI like DeepSeek R1 offers potential, it's still in its infancy. He advises caution, noting, "AI is very much in its infancy still." Bruno emphasizes leveraging existing expertise and predicts AI will first impact supply chains, benefiting restaurants indirectly.
