Casey Gipson is the COO and Executive Chef of the Uncommon Concepts group— a trio of cocktail bars in Portland, OR known for their eclectic offerings of nostalgia-inspired seasonal food and playful cocktails.

Chef Casey joined the Uncommon Concepts team in January of 2024, after serving as the Executive Chef of the Kimpton Hotel Vintage Portland, the Executive Chef of Migration Brewing, and after working with Food Network host Molly Yeh to open her restaurant and bakery in Minnesota (Bernie’s) in 2022.
