Chef Sébastien Canonne M.O.F is a French master pastry chef, esteemed educator, and culinary
visionary. With his rich and diverse background, Chef Sébastien has continuously pushed boundaries and elevated the art of pastry and baking. He has mastered the techniques of culinary, pastry and baking through decades of experience at some of the most prestigious 3 Michelin-Star restaurants, and luxury hotels globally.
After working at L’Elysée for French President François Mitterrand in Paris, he moved to the
United States in 1991.Canonne became the Executive Pastry Chef at the Ritz-Carlton Hotel in Chicago, and later earned the coveted title of Meilleur Ouvrier de France (MOF), the highest distinction a Chef can earn in France, and given by the French President. He is to this day, the first pastry chef living in the United States to be awarded this prestigious honor.
Putting his dedication and passion for culinary education into action, he co-founded, the internationally recognized institution, The French Pastry School in Chicago, as well as the groundbreaking education platform, the Butter Book that revolutionizes the learning experience for schools and all pastry and baking enthusiasts at home.
Chef Sébastien's remarkable accomplishments extend beyond the educational realm. Most recently, Chef Sébastien Canonne, co-founded Equii (ee-kw-ee), a Silicon valley funded food tech company who launched a revolutionary bread line that combines exceptional nutritional and taste.

food and beverage innovation, and lifetime achievement awards worldwide throughout his
illustrious culinary career. He was named a Knight by the French government in the Academic
Palms, the highest French National Order in Education and Science, and in the National Order of
the Legion of Honor, the highest French National Order in Civic Service.
