David has been an entrepreneur for most of his long business career, other than his 5 years at Skyy Spirits LLC (now Campari USA). It was at Skyy where he learned the alcoholic beverage business from his uncle, Maurice Kanbar, one of the most successful entrepreneurs in the Spirits industry. After Campari acquired Skyy David set out on his own, co-founding Bulldog Gin (sold to Campari) and Skinnygirl (Sold to Fortune Brands – Now Beam Suntory). In addition to Maurice, David counts Skyy Executives Tony Foglio, Gerry Ruvo, and Keith Greggor as mentors.
Why are so many spirits bottled at 80 proof? And while this appears to be the sweet spot for some types of liquor, why does proof vary so widely in others?
It was a matter of experimentation. We found that when we turned up the alcohol a little bit — in this case to 43 percent — not only did it bring out a little bit more flavor, it gave the vodka more character.
