With 18 years of experience as an educator and researcher in the fields of product development and dairy manufacturing, the Mexican-born cheese expert holds a breadth of knowledge from all over the world, earning her Masters and Doctorate in Spain and conducting Postdoctoral research in France. Dr. Licon is working towards ensuring the next generation of dairy industry professionals have the opportunity to receive comprehensive, hands-on training while enhancing the diversification of cheese.
