Nancy Santiago began her hospitality career in catering halls and quickly advanced through roles in bartending and service, eventually joining New York's Tour de France group as a corporate trainer. She deepened her expertise at Maiella with Chef Rocco Sacramone and Mixologist Padraig O’Brian, and later led the bar at David Burke’s Woodpecker, rising to general manager. At IGC Hospitality, she helped shape The Rockaway Hotel’s cocktail program—creating the viral Shark Bite—and later reopened and managed NYC venues like The Wilson and Winnie’s Jazz Bar. Her work earned her a spot as a mixology expert on Bar Rescue, and she’s since helped launch venues in both NYC and Florida. Nancy now serves as Beverage Director at IGC Hospitality, driving innovation and excellence across all beverage programs.
