After briefly studying business, Executive Chef Tony convinced his parents to follow his dreams of culinary school where his passion clearly paid off. After graduating, France started his culinary career at a private club in Hollywood and hotels before eventually rising to executive sous chef. Now settled in Texas, France has achieved his goal of reaching executive chef by 30. Within the kitchen, France is fortunate to have many experienced hands that are enthusiastic about taking menus as far as they can go, and he enjoys developing their talent. France will execute all food entities at The Ritz-Carlton Dallas, Las Colinas, including executing Chef Tesar’s Knife Italian.
